- 1/2 cup achiote paste
- 1/4 cup orange juice
- 1/4 cup lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 medium onion, thinly sliced
- 1/2 medium pineapple, cut into small pieces
- 12 corn tortillas
- Cilantro for garnish
Instructions:
- In a large bowl, combine the pork, achiote paste, orange juice, lime juice, salt, and pepper. Mix well to coat the pork.
- Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
- Preheat a grill or grill pan over medium heat.
- Thread the pork onto skewers.
- Grill the pork for 12-15 minutes, or until cooked through. Be sure to turn the skewers occasionally to prevent the pork from burning.
- Once the pork is cooked, remove it from the grill and let it rest for 5 minutes before slicing.

Carnitas Tacos

- Pico de gallo for garnish
- Guacamole for garnish
Instructions:
- In a large bowl, combine the steak, lime juice, orange juice, salt, and pepper. Mix well to coat the steak.
